Friday night quickie...

[x] Today has been a busy but otherwise good day. As stated yesterday, K. is working 12 hours of OT so the day was flavored with a little baking. I made a loaf of beer bread and then the kids and I made vegan "wheat thins" from scratch (which are fantastic, btw). Dinner was simple--pasta tonight, a last minute decision--so all I have to do is run the dishwasher and get my babies to bed before K. comes home. Unfortunately, he'll have to make a pit stop as LF needs some liquid refreshment for the morning and the cats are all but out of food, but then tomorrow will be a low-key, relaxing day (one which most definitely includes a soy latte, let me tell you). Not a bad shake in the least. A low-key, sunny day with plenty of fantastic moments with 3/4 of my favorite people in the world.

[x] I'm thinking about making BBQ baked tofu for dinner tomorrow, especially since I have beer bread in the ready. But the kids are clamoring for tofu nuggets (again? again.) so perhaps that will be the chosen dish. I don't know. I used to be a hyper-planner when it came to dinner menus, and then I just got a bit lazy free-spirited. So far it's worked out all right as I'm pretty resourceful, but sometimes I find myself floundering. Guessing that's to be expected, no? But overall, it usually works out so I can't complain too much. So something tofu for dinner tomorrow...yes.

[x] SO happy K. is coming home tonight. We have nothing planned--just some R&R--and I couldn't be happier about it. It will be nice to just relax together. I love quiet nights like this when our "to do" list is nonexistent. :) Perfect Friday night indeed.

[x] As usual, I have things to blog about...and I simply cannot do so in this medium. *sigh* I guess that's all part of the public blogging game. Well, that and being unable to choosing not to openly blacklist all those on my bad side. Heh.

[x] I had more to say, but the sole purpose of this entry was to preserve the elusive vegan "wheat thins" from scratch recipe, so mission accomplished. Happy Friday night, guys! Enjoy it with the ones you love and soak up that on-the-cusp-of-the-weekend love. :) <3

    I think that w/r/t planning - as long as you plan out the ingredients for several meals, you'll be set. I have been buying things on sale, and then using what I have in the cabinet to create the meal, and it's worked out so far.

    Thanks (again) SO much for the linkage. I can't wait to make it. I happen to have the ingredients handy, so I'm all over that today.
