[x] Legit for real, I am never more my myself than when I'm wearing old, well-worn
jeans, my Blackhawks shirt, and chopping the hell out of tomatoes on one
foot while singing along to The Eagles at top volume.
(Seriously, I have a hardcore Eagles/Don Henley addiction. (Side note about the infinite Don-love: we actually chose this song as our first dance, even.) My favorite-ever song--favorite ever in this whole, wide world--is a DH song. Any guesses?
Anyway...throwing back
to a recent entry discussing my tomato obsession, I just whipped up
enough homemade marinara for probably...the entire western hemisphere.
I'm making a spinach lasagna tomorrow, but decided to try out a new
recipe tonight for dinner--zucchini grinders, as found on my beloved
Allrecipes.
Notes of my own to supplement the delicious recipe:
* Add a healthy amount of the red pepper, even if you're not a fan of spicy. You'll appreciate it later.
* Add more zucchini than the amount listed--next time I think I'll super-thinly slice another medium zucchini and add it to the chopped mixture (just to vary it up a bit)
* I used Daiya (I know you're all shocked, right?) mozzarella style shreds.
* Out with butter, in with EVOO
K. picked up the wrong kind of rolls on accident, so...they were more like, say, sandwiches than grinders. No biggie, though. They were still great, especially with a little extra chunky marinara. Mmmm.
[x] Have I mentioned how much I adore Freecycle? I netted some fresh sage and a few pounds of cherry tomatoes this afternoon. Score! I'm drying out the sage as we speak and contemplating the demise of aforementioned cherry tomatoes. Mmm...tomatoes.
[x] This week is all sorts of bat-shit craziness. Between OT for LF, and optho appointment for LF, a peds visit for LF, a doctor's appointment for me, and a CT scan for LF--in addition to preschool, life, K.'s kinda-screwy work schedule this week...yeah. I foresee a LOT of Starbucks in my future. That is all.
[x] The VMAs last night were lame as hell. Not that I was expecting too, too much, but even still...it was weak. Chelsea Handler is so far from "funny", it's ridiculous. Blah. But SUPER cute bonus points to K. who DVR'ed them for me thinking I might forget they were on last night (he was at work). I almost forgot and lunged toward the TV to record 'em, but found they were already scheduled to record. <3 It's the little things, I tell you. I'm easy to please. <3
[x] What will tonight hold? A walk? Ice cream? The library? Maybe a combo of all three? I don't know. The thought of eating another morsel is almost criminal at this point. I am THAT full. But we shall see.
[x] Before I go...this is a cute idea, but I wondered how I'd feel about the finished project if/when I saw it. Well, the finished project is freaking adorable. It's a good thing K. has agreed to letting me trap, vet, and adopt Fourth Meal before the winter rolls in. I'm so a crazy cat lady already, at the ripe 'ol age of twenty-nine.
